And you’d better believe nothing is going to keep me from indulging in all the incredible seasonal produce. My cookbooks always make an appearance on the coffee table this time of year when I pour through recipes, looking to satisfy my fall craving for something nourishing, comforting, and new. I want recipes that will fuel both our busy schedule and our momentum into the colder months.
Fall is perfect for fresh but hearty salads—think crisp vegetables sprinkled with cozy-flavors like pepitas and cranberries. Think dark greens and a simple fresh dressing. We’ve got the perfect recipe for you, and I’m going to be eating it all season long. It’s healthy, bright, and a can hold up in your lunch bag for work the next day.

Chop washed kale into desired size for salad, add to bowl. Julienne Carrots, Beets, and Apples, adding them on top of the salad.
Whisk minced Shallot, lemon juice, mustard, and honey till combined. Slowly add in the olive oil as you continue to whisking until it emulsifies. Add S+P to taste.
Add dressing to the salad and toss to coat.
Top salad with Hemp Hearts, Cranberries, and Pepitas. Enjoy!
