Plant-Based Protein Chickpea Quinoa Salad

Enjoy this is a fully vegan meal that is loaded with plant-based protein, healthy fats and carbohydrates. It’s simple, delicious and nutritious!

Chickpea Quinoa Salad:

– 1 cup of chickpeas
– 1 cup of quinoa
– 1 cucumber (chopped)
– 1/2 of a medium avocado
– 3-4 cups of kale (chopped)
– 1 tbsp of hemp seed

Ingredients for Lemon Mustard Vinaigrette

– 1 tbsp of balsamic vinegar
– 2 tbsp of hemp protein
– 2 tbsp of tahini sauce

Directions:

Add kale to salad bowl along with cucumber, avocado, hemp seeds and hemp protein.

Next add tahini, coconut aminos and balsamic vinegar and mix everything together.

Once evenly mixed add the quinoa and chickpeas and then enjoy!
