As soon as the weather turns colder I find myself craving warm and cozy comfort foods. Nothing is more appealing than snuggling up on the couch with a blanket and a warm bowl of the seasons best offerings.
But for those of us who prioritize healthy eating, this can sometimes feel like a challenge. What we sometimes think of as “healthy” food—salads, veggie platters, smoothies—doesn’t always seem so appealing when the temperatures drop.
Enter this Buddha bowl. It’s warm, cozy, and comforting while still being packed with plant-based nutrition. It will not only nourish your body, but also satisfy your need for a something that warms you from the inside out. It even comes with its own creamy sauce.
Even better is that it’s extremely versatile, you can change the protein and veggies around your preferences or as new winter produce comes into the markets. Or, change up the flavor profile all together by adding your own favorite sauce. The options are endless here. So grab your warm blanket and a loved one and settle in for a cozy, nutritious, night-in.
Preheat Oven to 400.
Rinse and cook your quinoa per package instructions. Set aside, covered, to keep warm.
Peel and dice your butternut squash and chop the broccoli into bite size pieces. Spread veggies on a sheet pan, and toss with a little olive oil, salt, and pepper. Roast for 20-30 minutes until squash is soft when pierced with a fork and broccoli has a nice browning on it.
While the veggies are roasting, rinse and drain your chickpeas & set aside.
Chop your dinosaur kale and sauté with a little EVOO or water in a pan until just slightly softened.
Assemble bowls: For the base of the bowl add some quinoa. Then, add some roasted veggies, sautéed kale, and chickpeas. Drizzle a little cashew dressing over it all, then finish it off with a sprinkle of pomegranate seeds and pepitas.
Drain cashews & combine all ingredients into a high speed blender & process until smooth
